“As Bali’s first underwater restaurant, Koral promises something completely unique. Our bistronomic concept combines all aspects of the dining experience, with elegant dishes inspired by local flavours, a warm and welcoming ambiance and the one-of-a-kind opportunity to dine inside a tropical aquarium,” said Vincent Guironnet, General Manager, The Apurva Kempinski Bali. “With a growing collection of outstanding restaurants, bars and lounges spread across the resort, The Apurva Kempinski Bali is quickly cementing its reputation as one of the leading culinary destinations on the Island of the Gods.”

The Apurva Kempinski Bali opened in the upmarket Nusa Dua area of Bali in February this year. Just as Koral, it takes inspiration from the tropical characteristics of Bali and the Majapahit empire, brought to Indonesia from the 13th to 16th Centuries. Teak wood ceilings and walls made from traditional red clay bricks frame the aquamarine views through the windows. Hundreds of tropical fish swirl in a kaleidoscope of colors, creating the one-of-a-kind dining experience.

The menu offered by Koral presents the dishes with a huge variety of local seafood, combined with fresh local products. Executive Sous Chef Imam Fayumi’s skills transform humble ingredients into a wide selection of elegant dishes. Some of the highlights are ‘Tomatoes Bedugul’, ‘Lump Blue Crab’ and ‘Prawn & Lime’. Additionally, they offer a four-course degustation menu featuring the finest ingredients paired with sommelier-selected wine. Moreover, Koral is the home to a live cocktail station, that features the best mixologists. Koral’s signature ‘Spiced Ink Mojito’, blended with a spiced rum, squid ink mint syrup, lime fruit ginger, and kaffir leaves, is a total must-try, as well as their selection of handcrafted bubbly cocktails and Indonesian craft beers. And as for the younger guests, there’s also an opportunity to try a kids’ menu that features popular movie characters, fresh juices, and mocktails
